My Kind of Snow Day

Happy Wednesday!

 Hopefully, like me, your part of the world was covered in lots of white stuff so you didn't have to work.

Hopefully you got to dress up in your boyfriend's snowpants and bundle up and get thrown play in the snow.
Hopefully you got to go on a walk in the winter wonderland and gawk at all the CRAZY runners out there during a blizzard!

And hopefully you got to eat a healthy and nutritious dinner that was made with someone you love :)

What's for dinner?

If you havn't tried kale chips, do yourself a favor and make them! They are crispy & delicious, low in fat, and healthy! What's not to love?


I also subbed a couple pinches of this onion mix for salt and pepper on the kale chips before baking. Umm, definitely do this.


With dinner, I also had a grilled cheese with reduced fat cheddar and sun-dried tomatoes. Sun-dried tomatoes in grilled cheese= best idea ever.

  3. I like this post! I totally got to wear my boyfriend's snow pants today! Playing in the snow is exhausting. I had a blast though. Your day sounds like it was great. :) Thanks for the great dinner idea! Looks really good.

  4. haha.... Where in Portland do you live? i had nutcracker rehearsals at the Portland Ballet Company.... i don't know if you know where that is....? but it's right near back bay, so
