Vegetarian Chickpea Burgers and Snow Adventures

Happy Saturday People!

I have a GREAT recipe to share with you. Andrew and I just both thorougly enjoyed these burgers.

Curried Chickpea Burgers

Makes 4 Patties
  • 2 Cups Chickpeas
  • 1 Egg
  • 1/2 Cup Panko Breadcrumbs
  • 1/2 Cup Carrots
  • 1 Clove Garlic
  • 1 Hefty Tablespoon Curry
Combine all ingredients in food processor or blender. Process until mixture is fairly smooth. KEY STEP: Let sit in fridge for atleast 30 minutes.

When ready to cook, form 5-6 patties. Heat up a saute pan with oil. Grill on each side for 6 minutes.


We topped our burgers with some sharp cheddar and salsa.

My day consisted of a wonderful cross country skiing trip with my friend Krissy. It was a good work out and much more fun than Planet Fitness! We went to Riverside Golf Course in Portland. Its free :) There was a lot of people out on the trails.
