My Kind of Snow Day

Happy Wednesday!

Hopefully, like me, your part of the world was covered in lots of white stuff so you didn't have to work.

Hopefully you got to dress up in your boyfriend's snowpants and bundle up and get thrown play in the snow.
Hopefully you got to go on a walk in the winter wonderland and gawk at all the CRAZY runners out there during a blizzard!

Back Bay!

And hopefully you got to eat a healthy and nutritious dinner that was made with someone you love :)

What's for dinner?

If you havn't tried kale chips, do yourself a favor and make them! They are crispy & delicious, low in fat, and healthy! What's not to love?

I also subbed a couple pinches of this onion mix for salt and pepper on the kale chips before baking. Umm, definitely do this.

With dinner, I also had a grilled cheese with reduced fat cheddar and sun-dried tomatoes. Sun-dried tomatoes in grilled cheese= best idea ever.

Have a great night! :)

Lost in a Winter Wonderland

Sunday was one of those perfect winter days. A day that'll fondly be remembered on a hot muggy July day when your stuck in traffic on your way to the beach  Your AC hasnt worked in months and you thought you'd be able to make it through just one more summer.

Let's not go there.

Back to Sunday. I invited myself got invited to head north to Camden with my mom and dad to go cross country skiing. YES I'll go. Cross country skiing has always been a favorite winter activity of mine.

First things first, renting skis for Andrew. They were a 20 dollar rental- and I think he'd say it was worth it. Upon reccomendations from a super friendly salesman at Maine Sports Outfitters, we were directed to go skiing at the Tanglewood 4-H camp a few miles up the road in Lincolnville. What a great tip!

Oopsies!!

After a few hours of cross country skiing, we headed over to Camden snowbowl for the toboggan shute. The shute is a fun thing to do whether you're 7 years old or pushing 60.
hahaha.
Such a fun way to get outdoors and truly take in the beauty of all that white stuff.

HEALTHY LIVING CHALLENGE!!!

All throughout January, I refrained from eating any meat products. I have never been a huge meat and potatoes kind of person, but it was still a challenge. I really wanted to do it completely healthfully, so I always tried to make sure I had a good ratio of protein/carbs/healthy fats for each meal. Since I am still eating eggs and dairy it really wasn't hard. It was fun to mix up things with my diet. I don't know if I'll keep with the vegetarian-ish diet, we'll see.
Meat free January

My new goal for Februrary is to not drink any alcohol. Frankly, I think a month off will do me (and my wallet) some good. Plus, bikini season is right around the corner ;) Basically, I am blogging about this to hold myself accountable.

I'll take a milk on the rocks, please.

Have a great day!

Happy Friday!

I realized I forgot day 2 of the 30 day challenge so here goes:

Day 2: Where you would like to be in 10 years.

What a question! Ten years from now, I'll be 33. That is so so so weird. I hope to be happy and healthy. I want to be married by then. I can't wait to be ready (emotionally, mentally, physically) for a family of my own!

Mostly, so I can dress them up like this, take some pics, and pull these bad boys out when their boyfriends/girlfriends come over 10 years later.

I want to use my degree, by age 33, as a health educator and educate, inform, and promote HEALTH in the community- working within the realms of obesity prevention would be my ideal career. Health comes before everything; "The greatest wealth is health.  ~Virgil

Ok, so that's that! Healthy and happy is the way to be :) There's not much more you can ask for..

The snow today is coming down in bucket loads!!

I still made it to gym today. Someone buy me snow tires?

A solid 4 miles on the treadmill in 37 minutes then I did some abs and stretched. Running is the BEST- theres just a point in your run when you feel like you could run forever. I never thought I would ever say that. If you don't run, start!

My favorite running songs are from Rodrigo y gabriela. These two are brother and sister- and are so, so, so talented. Check them out please. They have a free download on their site.

Anyways, that it for today. Have a wonderful Friday!!

Snow Day

Happy Hump day! Today I woke up to this:

Whenever there is a big snowfall, it looks absolutely beautiful at first. As the days pass and the dirt gets mixed in with the snow, the white stuff loses its appeal for sure.
On a walk the other day. Dear Portland, you dirty! Can we talk about how bad Portland smells on trash day?
We are pretty much out of groceries (no eggs, no cereal, no PB) so I made a yogurt bowl for breakfast.
In the mix:
  • 1 Cup Plain Non-fat Yogurt
  • 1/2 Cup Trader Joe's Frozen berrie medley (Very good!)
  • 1/4 Cup Oatmeal
  • Sprinkle of raisins and peanuts
Yum! This was an excellent breakfast- with a healthy mix of lean protein, fruit, and carbohydrates. The oats in the yogurt kinda of get chewy and taste really good. TRY IT!

On the schedule today? Work was cancelled so we might head to one of our favorite places for lunch or if I find the motivation, we'll walk to Hannaford for groceries to make butternut squash soup- vegan style!

See ya!
