Vegan Month

Day 13:
WW Wrap
Refried Black Beans
Salsa
Carrots & Hummus
Green beans

Day 14: Patriots game
Black bean, edamame, corn salad
Veggie platter of carrots, cucumbers, celery
Baked pitas (olive oil, s & p)
Homemade hummus

I really am enjoying this diet. It is pretty easy considering the fact I have always eaten lots of veggies anyway. After watching Forks over Knives and just gaining an increasing level of  awareness of how the USDA treats their meat, I don't know if I could ever go back.

Forks over Knives focuses on medical and scientific evidence to promote a whole foods diet.  I am going to take the lazy route and refer you over to Emily's blog post to read a spot on review.
I was a bit concerned about my B12 and iron levels without any meat. However, my vegetarian iron pill contains B12 so no worries there anymore.

Day 5 Dinner:
@ Chicago Diner "Meat Free since '83"
Vegan Dagwood sandwich w/ Kale Salad for me.
Andrew had a vegan bacon cheeseburger. HIGHLY recommended restaurant if you're ever looking for a healthy and delicious meal in Chicago!

Day 6 Dinner:
Stirfry Seitan (you can read about it here)
w/ Vegetables in soy sauce

Day 7 Dinner:
Cheese-less pizza w/ lots of veggies
Almonds
Homemade vegan german chocolate cake for Andrews birthday!


Day 8 Dinner:
Stirfry veggies, serving rice noodles
Fruit w/ vegan chocolate

Day 9 Dinner:
PB & J
Veggie Baked Beans

I love pinterest for wedding ideas and planning. It reminds me of reading an amazing magazine that never seems to end..it is so awesome. And addicting. There are good ideas for the venue, decorations, and dresses. Ooh, the dress.
I love the ruching and neckline of this dress. However, I only like it in the little picture above and not as much if you follow the link to see the full deal.  I've already told my fiance (saying that word gives me huge butterflies..) that I don't want him to see the dress before the wedding.


I think it needs a dab of Pippa thrown in there.. a little more va va voom.

There is so much to think about. I am so happy and in love.
